http://www.foodnetwork.com/recipes/p...il-recipe.html
Paula's recipe is my timer base, I put the trinity in with the potatoes and use a pan to cook my CHICKEN SAUSAGE putting it in with drippings along with the shrimp...oh and since I modified it already sometimes I'll throw in a chicken thigh with the sausage and dump the pan into the pot.
I' also substitute three tablespoons Old Bay powder for the zatarains boil liquid.
And two teaspoons of Tabasco have been known to season the water...
When on the plate I season with a sprinkle of old bay..

If I put the sausage in too early it's like an old tire, you can have the pork version so the time will work for you.
Enjoy brudda!
--------
The original boil. Learned this at Fort Ritchie MD, First Sergeant was from Baltimore.
Had a designated picnic table that got used for serving... Lined with newspaper he dumped the finished boil onto the table and guests ate off the table...we called it a party boil

INGREDIENTS
1/2 cup Old Bay Seasoning
1 tablespoon salt
3 quart water
1 can (12 ounces) beer (optional)
8 medium red potatoes cut in quarters
8 ears fresh corn cut in half
4 pounds large shrimp in shells

DIRECTIONS
In an 8-quart pot bring OLD BAY salt water and beer to boil on high heat. Add potatoes. Cook 13 minutes.

Add corn. Continue to cook 7 minutes. Add 4 pounds shrimp Cook 4 minutes.

Drain and dump contents in the center of a paper-covered picnic table. (Contents of pot can also be divided into several large bowls or buckets.) Sprinkle additional OLD BAY over the top for finger-licking flavor.
