Default Smoked Kabobs

OK...something new for me, branching out from just meat...LOL.

I tried these and loved them, thought some of you might be interested. Also, they are great served on a bed of rice. This reminds me a lot of some of the kabobs I had while in Hawaii. This will make about 12 kabobs (learned that the first time I did them...that is a lot of kabob to eat!) so adjust accordingly.

What is needed for kabobs:

3 or 4 whole boneless/skinless chicken breasts
2 packages of beef stew meat or some cuts of beef of your choice
2 large cans of pineapple chuncks
1 1/2 pints of cherry tomatoes
1 green bell pepper
2 yellow bell peppers
2 red bell peppers

What is needed for marinade:

1 cup of Worcestershire sauce
2 cans of pineapple juice
juice from 1/2 lemon
1 can of frozen orange juice concentrate
1/2 can of water (from O.J. can)
Salt & Pepper to taste

Simply cut the chicked, beef, bell peppers to equal size.

Thread all of the ingredients on skewers, arranging them to mix up ingredients and colors.

Combine marinate ingredients in a zip lock bag, seal and shake to mix.

Place kabobs in bag and let marinate over night.

(We love garlic, I sprinkled a little garlic powder on them before smoking them)

Place in smoker (or on grill with indirect heat) at 225 degrees for about 2 to 2 1/2 hrs.

Remove, season to taste with salt/pepper.

Mmmmmm These sound great! Reminds me of the ones I have when we go to Matt's Steakhouse on the other side of Rolla. Thanks for the recipe. I will try them as soon as more peppers get big enough. I just stuffed the ones we had yesterday.
